Harvest @ The Bellagio

Let’s say you took a crazy pill and decided to stay healthy while in Las Vegas. Well, have no fear, because vegaspoolseason.com has you covered. Harvest by Roy Ellamar is health food redefined. His wholesome creations  explode with flavor and originality. If you say organic and sustainable every day, then look no further, for Harvest is your destination. Let’s start with some farm to table salads, with vegetables pulled daily from Blue Lizard Farm in Nevada. Or Japanese tomatoes flown in from Cooke Farm in California. These salads are so fresh, you’ll think you grew the ingredients yourself. Move on to the raw bar, or the boards stacked with gourmet cheeses, prosciutto, or steak tartare. Try not to stuff yourself on freshly baked naan bread with pesto. For your main course,  you can order the spice rubbed lamb chops, braised organic eggplant, or cockscomb pasta with quinoa. Plenty of other healthy options are available at Harvest. A phenomenal restaurant to atone for all the food sins you’ve committed on vacation.

He lives in Los Angeles, but travels to Las Vegas at least twice a month to reboot. When he’s not writing, he can be found at the nearest pool bar, staying cool and perfecting his signature cocktail, the Midnight, with the mixologists of Sin City. He’s been known to disappear for days, only to return with a must-eat culinary gem, and while he believes nobody’s perfect, he’s pretty sure we can get damn close with the right pair of sunglasses.
