Echo and Rig @ Tivoli Village

One of the best food bargains in Las Vegas is Echo and Rig in Tivoli Village. Just off the strip, Echo and Rig give you the best cut of meat for the best price. The in-house butcher allows Chef and Owner Sam Marvin to keep the prices on the lower side (it’s still Vegas), and still deliver a premier steakhouse experience. Start with a wide selection of small plates such as gnocchi with mint-pea pesto or the Maryland lump crab cake. Then dive into one of the Butcher’s Select Cuts. Nothing compares to the freshness of this beef. Top it off with one of seven select sauces, and still have enough cashola left to hit the town.

He lives in Los Angeles, but travels to Las Vegas at least twice a month to reboot. When he’s not writing, he can be found at the nearest pool bar, staying cool and perfecting his signature cocktail, the Midnight, with the mixologists of Sin City. He’s been known to disappear for days, only to return with a must-eat culinary gem, and while he believes nobody’s perfect, he’s pretty sure we can get damn close with the right pair of sunglasses.
