Beauty & Essex @ The Cosmopolitan

Created with New York Style, and served with understated Vegas flare, Beauty & Essex has leveled-up in the game of new American cuisine. With a real live pawn shop for its entrance, Beauty & Essex seeks to recreate Chef Chris Santos’ NYC roots with that Las Vegas “go big or go home” vibe. Relax in plush, leather booths and drink at probably one of the best craft cocktail bars in town. Noteworthy appetizers include caesar toast, with crispy chicken skin, and roasted bone marrow with rioja braised shallot marmalade. Furthermore, try sharing the K-town boar burgers. In addition to the grilled cheese, smoked bacon and tomato dumplings, the boar burgers are amazing. Finally, the tasty main courses include Mexican street corn ravioli and dry aged tomahawk rib eye steak. After dessert, sit back and imagine you’re in the East Village.

He lives in Los Angeles, but travels to Las Vegas at least twice a month to reboot. When he’s not writing, he can be found at the nearest pool bar, staying cool and perfecting his signature cocktail, the Midnight, with the mixologists of Sin City. He’s been known to disappear for days, only to return with a must-eat culinary gem, and while he believes nobody’s perfect, he’s pretty sure we can get damn close with the right pair of sunglasses.
