Bazaar Meat by Jose’ Andres @ The SLS

For you meat lovers out there, you can’t leave Vegas without at least one meal at Bazaar Meat by Jose’ Andres at the SLS. Fresh seafood, caviar and of course the best cuts of beef, imported from around the world, and cooked (or not), to absolute perfection. Start with bite-sized Reuben sandwiches, followed by gazpacho shots. Then pick from the exclusive raw bar. With selections like live scallops, oysters, and premium caviar, Mr. Andres has brought the sea to you. If you’ve come only for the meats, follow your starters with a tartare, or a carpaccio. Finally, the main course, and if you’re with a group there’s only one item to order. It’s what Bazaar is known for – the whole suckling pig. Roasted in a wood-fired oven, crispy on the outside, juicy on the inside. Its good enough to convert a vegan.

He lives in Los Angeles, but travels to Las Vegas at least twice a month to reboot. When he’s not writing, he can be found at the nearest pool bar, staying cool and perfecting his signature cocktail, the Midnight, with the mixologists of Sin City. He’s been known to disappear for days, only to return with a must-eat culinary gem, and while he believes nobody’s perfect, he’s pretty sure we can get damn close with the right pair of sunglasses.
